Umm….it’s really, really hot outside.

Is it just me or does it feel like we’ve been in the month of January forever?
It’s not that I have anything against January – I like it just fine – but I do have the feeling of being on a hamster wheel for the past few weeks for some reason. Too much time spent snuggled on the couch in front of the fireplace perhaps? 🙂
We finally – finally! – have a full week of fall weather coming. Which also means it’s finally soup weather. YUM.
I made a batch of delicious Tortellini and Red Pepper Soup over the weekend to have on hand for the week and I thought I’d share it with you today. It’s just a few ingredients, can quickly be whipped up on a weeknight, and is full of warm, comforting flavor.
When you live alone it can be so tempting to eat popcorn for dinner every night. It’s quick, it’s easy, it’s no mess, and it seems to work well for Olivia Pope, so why not?
However, I have found that while popcorn for dinner is delicious – it leaves me starving by the morning and then I find myself hitting up the vending machine waaayy to much the next day at the office. So, I’ve been making an effort to cook myself something good at least three or four times a week. Sometimes I cook up trusted old favorites, and sometimes I try something new.
Last week, the something new was a super delicious, super easy Roasted Butternut Squash Salad.
And it turned out absolutely Yummy.
Who doesn’t love a chocolate chip cookie?
It’s a classic.
I mean if there’s a little black dress of the cookie world, it’s the chocolate chip cookie, right?
What if I told you I kind of have a pretty great chocolate chip cookie recipe?
I’m not going to tell you they’re the best ever (although others may have…just sayin’), but I will tell you they’re pretty amazing. Like sit-and-eat-the-whole-two-and-half -dozen-at-one-time kind of amazing.
Not that I’ve ever done that of course. 😉
My mama makes the best apple pie in the whole world.

Perfect buttery flakey crust and piled high with the most delicious apple filling.
Sweet, but not too sweet, just a touch tart, and so full of juicy cinnamon sweet apple goodness you kind of just want to sit and eat the whole pie.
You don’t even have to take my word for it, because I’m sharing the recipe with you today. 🙂
It’s finally here!!
I wait for the fall season all year long. Right now, I want time to slow down so I can savor every last bit of the next few months.
Crisp mornings. Cool nights. Cozy sweaters. Boots. Apple orchards. Pumpkin spice everything.
When September hits, I immediately want hearty soups simmering on the stove and something delicious baking up in the oven (this bread is one of my favorites).
Apologies, but I don’t have any pretty spaces to share with you today. I tried to spend as much time away from the computer as I could this weekend. Sometimes, it feels good to close down the laptop and leave the phone in another room for a couple of days, know what I mean? 🙂
My shopping and wrapping is officially done, but if I’m being real – I feel like I came up a bit short in the Christmas festivities this year…
