Chewy Oatmeal Cranberry Cookies

Looking for a new cookie to add to your holiday baking this year?

I’ve had this Chewy Oatmeal Cranberry Cookie recipe in my recipe box for years and it’s always a hit.  You should probably give it a try. 😉

INGREDIENTS

3/4 cup shortening

1 1/4 cup brown sugar (light or dark – I prefer dark)

1 large egg

1/3 cup milk

1 1/2 tsp vanilla

3 cups old fashioned oats

1 cup bread flour (you can use all purpose flour instead – I just think bread flour makes a chewier cookie)

2 tsp baking powder

1 tsp cinnamon

1/2 tsp salt

1 cup dried cranberries

1/4 cup chopped walnuts (optional)

Heat oven to 375 degrees.

Combine shortening, brown sugar, egg, milk and vanilla in large bowl or stand mixer.  Beat at medium speed until well blended.

In a separate bowl, combine oats, flour, baking powder, cinnamon and salt.  Mix into creamed mixture at low speed until blended.  Stir in cranberries and walnuts.

Drop by rounded tablespoonfuls onto baking sheet. Bake for 9 – 10 minutes.  Cool 2 minutes on baking sheet.  Remove to rack to cool completely.

Makes 2 1/2 dozen cookies.

    This sounds yummy! I hope that butter will be okay. I can’t eat shortening. That does make it chewy. Hope you will have a special christmas. I know it will be different and hard this year. Your home looks so festive and beautiful!

      I have not tried using butter, but it’s definitely worth a shot! Christmas was special in its own way – it was a tough one, but a nice one too. Thank you Julie. Hope you enjoyed a beautiful holiday too. 😊
